Low Carb Almond Bar or Chunks


Who says we can’t have chocolate on Valentine’s Day. Here is a great substitute for us low carb groupies, a Low Carb Almond Bar.  The chocolate melts very quickly in you hands, but if you are like me they don’t last long enough in my fingers to melt.

Low Carb Almond Chocolate Chunks 019

¼ cup coconut oil

¼ cup cocoa powder

3 tlbs powdered erythritol

3 drops stevia

½ cup almonds

Add an inch of water in bottom of double boiler, place second pot on top of boiling water. Melt coconut oil add cocoa powder, powdered erythritol and stevia. Stir until all is dissolved.
Remove from heat.
Use any kind of dish, I used a cake pan with sides on it place parchment paper on the bottom and up the sides of the cake pan.
Pour in the chocolate mixture, add almonds and using a spatula spread the almonds around and cover with chocolate.
Place pan in freezer for 10 minutes.
Remove from freezer, break up the chocolate with a knife, place in sealed plastic bag.
Keep refrigerated.

Yield: 9.6 net carbs for the whole recipe
