Low Carb Breaded Chicken Fingers


How much chicken do you eat? If you are like me a lot and because of that we need a variety of ways to cook it. Here is a Low Carb BREADED Chicken Finger Recipe you will really enjoy; you would never know the difference from bread crumbs to pork rind crumbs.

 

Breaded Chicken Fingers

Breaded Chicken Fingers

5 Chicken Breasts
1 70g Pork Rinds (Baken-Ets)

1 Tbs Garlic Powder or Salt

1 Tsp. Salt

½ Tsp. Pepper

2 Tbs Olive oil
Cut chicken into strips, brush pieces with oil (on all sides) set aside.
Crush pork rinds into fine crumbs in the original bag or a zip lock bag, you can use a meat tenderizer, rolling pin, hammer or even your fist; add spices to the crumbs.

Place crumbs into a dish add chicken, a piece at a time; roll in the crumbs to cover each piece.

Arrange chicken pieces on parchment paper on cookie tray.

Preheat oven 375 F, cook for 30 minutes. You will find the bottom of the chicken will become crispy within 15 minutes, turn over for another 15 minutes. ( Nice and moist)

Yield:  Full bag of pork rinds are 6.2 carbs
17 chicken fingers = .36 carbs per piece
