Low Carb Cauliflower Cheesy Garlic Bread


I don’t think you would know this was made out of cauliflower. The flavor of garlic, butter and cheese hmmmm! This recipe is a must and simple to make. Every recipe I look at these days they instruct to steam your cauliflower, but in this recipe I find you can eliminate this step and the recipe turns out perfectly. The egg and cheese keeps the cauliflower together with know problem. Oh my gosh using parchment paper is such a blessing, nothing STICKS! The most time is baking in the oven the rest is quick and easy. Well lets get started and make this deli sh dish!

Cheesy Garlic Sticks

Low Carb Cheesy Cauliflower Bread Sticks 0031 head of cauliflower shredded (mine made 7 cups)

2 cups shredded cheese ( I use what I had in the fridge, Monterey Jack Cheese

1/4 cup Parmesan cheese

2 Tbs Almond Flour

1/2 tsp salt

2 eggs

1 Tbs Garlic Powder or Salt

Topping

1 Tbs butter

1/2 tsp garlic salt

1 1/2 cup of shredded cheese

Preheat Oven 425 F

Shred cauliflower in a food processor, place in a mixing bowl. Add all dried ingredients, Parmesan, almond flour, salt, and garlic powder, mix well.

Mix in shredded cheese then mix eggs thoroughly. I like using my hand to mix but a spoon will do.

Place parchment paper on a cookie sheet and place half of the mixture on the paper and spread out a 1/4 inch thick into a rectangular shape.

Place in oven for 25 minutes, when the bottom is getting golden brown remove from oven and take off of cookie sheet, paper and all. Add a new piece of parchment paper on pan and flip the cooked cauliflower over onto the new parchment paper. ( If you do not understand please view the video)

Return to the oven for approximately 15 more minutes.

Remove from oven and spread the bread with garlic butter, add your choice of cheese on top.

Return to oven and let the cheese melt. I end up using the broiler and kept an eye.

When cheese is melted and golden brown remove from oven, cut and serve.

The other half of the cauliflower mixture I repeated the same process except I pressed it out on a pizza pan. Baked it and wrapped in plastic and put in freezer for either pizza or more garlic bread.

The frozen crust I thaw it, put back in the oven on parchment paper for 10 minutes at 425 remove and add my toppings and broil till cheese is melted.

Makes: 2 pizza crusts or 2 bread stick crusts

Yield: 20 net carbs in each crust

One crust with cheese topping is 33 net carbs

Makes: 12 slices

Yield: 2.75 net carbs per slice.
