Low Carb Chicken with Mole Sauce


Are you into Mexican Food? Try this Low Carb Chicken Mole, Rich dark and delicious, this signature Mexican dish does not have to be complicated. Just remove the skin, brown the thighs, add the spices, thicken the sauce and you’ve got yourself a great meal.  I have not had this recipe before, I was in one of our local restaurants and that was there special for that day so I thought this would be a great time to try it. I really enjoy it so I though I would try and make it low carb for myself and all of you.

IMG_58718 Skinned Chicken Thighs

1 pint salsa ( your choice)

Salt

2 Tablespoons Avocado Oil

2 teaspoon salt

1 1/2 tablespoons chili powder

1 1/2 teaspoons dried oregano

1 1/2 tablespoons unsweetened cocoa powder

1 Tablespoon lime juice

Remove skin from chicken, sprinkle chicken with salt, heat oil in skillet. Place thighs flesh down and cook till brown.

Remove chicken from skillet

Add salt, chili powder, dried oregano,cocoa to the skillet,mix well. Place chicken thighs brown side up into skillet, add salsa mix in.

Cover chicken with a lid and cook for 20 minutes, half way through cooking time turn chicken over.

Remove the lid add lime juice and let the sauce thicken.

Ready to serve:)

Serving: 8

Yield: 3.8 net carbs
