Low Carb Chocolate Almond Clusters


What a great dessert or sweet snack to have stored in your fridge when that sweet tooth starts to bug you. Here is a great recipe, Low Carb Chocolate Almond Clusters from CAREFREE CANDIES COOKBOOK, and created by Kelley Herring. Man, Kelley has a great cookbook with a variety of candies, and chocolate bars, just for us low carbers or if you want to eat healthier.
Her cookbooks are so educational and healthy for you, I think you will really enjoy it. Now I did not use the same products as Kelley did but I am very happy with the brand names I used.

So lets get started and enjoy these Low Carb Chocolate Almond Clusters!

IMG_5812 (2)3.5 oz Dagoba Organic Eclipse Bar (85% cacao content) or Paleo Dark Chocolate Bars and Chunks ( I used PC Organics Biologique European Extra Dark Chocolate 85% cocoa solids)

5 Tablespoons Heavy Cream or Native Forest Coconut Milk

1/3 cup powdered Eryrithol

1/16 teaspoon pure stevia extract

1 cup raw almonds

Chop chocolate and combine erythritol and cream or coconut milk in a heavy bottom saucepan

Heat over very low heat to melt

Stir in stevia to taste

Place almonds on baking sheet in clusters of 2 or 3, spoon chocolate sauce over cluster of almonds

Transfer to fridge

Yeild: 30 clusters

53 calories

1.2 net carbs per cluster
