Low Carb Cinnamon Sugar Cookies


I love these Low Carb Cinnamon Sugar Cookies, they are my favortist (Is that really a word?) If not it is in my vocabulary now 🙂 The aroma was just floating through the house and couldn’t wait to sink my teeth into one. They are delish, almost a cakie texture, soft and moist and reminded me of a macaroon. I sure cannot keep them in the house, this is definitely a cookie to try.

Interesting how coconut flour absorbs any kind of liquid, if you let the batter sit for 5 minutes or more the batter thickens up like crazy. This Low Carb Cinnamon Sugar Cookie is quick, easy and you will not regret trying them.

3/4 cup Erythritol

1/2 teaspoon Vanilla

1/4 teaspoon Salt

1/2 cup melted butter

3/4 cup Coconut Flour

Cookie Topping

2 teaspoons cinnamon

2 teaspoons Erythritol

Instructions

Combine eggs, sweetener, salt, vanilla and butter.

Stir in flour

Let sit for 5 to 10 minutes to allow batter to thicken

Make 1 1/2 inch balls, place on parchment paper on baking sheet, press with a fork

Sprinkle cinnamon sugar mixture on each cookie or roll mixture in the cinnamon sugar mixture.

Preheat oven 375 F, bake for 15 minutes

I store mine in a glass container in the fridge.

Servings: 24

Yield: .8 net carb
