Low Carb Deviled Eggs

Summer time is the time to enjoy those Deviled eggs, mined you any time of the year will work for me. Whenever I made Deviled Eggs I would always use coleslaw dressing, it is so good. But the carbs are ridiculous. So I played with different ingredients and came up with my own dressing to add to my Deviled Eggs. I know you will like them!

Tips: You could add some green relish and the green of shallots but remember to add the carbs. You can use this dressing as coleslaw dressing or even you’re Cauliflower Salad. It’s good in many things.

Dressing

1 1/3 cups mayonnaise
3 tbls white vinegar
2 tbls plus 2 teaspoons stevia or xylitol
________________________________

Dash salt and pepper
½ tps onion (per egg)
Dash paprika (sprinkle on top of eggs)

First of all you need to make hard boiled eggs, peel off the shells, cut in half diagonally and remove the yolks and place yolk into a bowl. With a fork smash all the yolks finely add ½ teaspoon fine diced onion per 1 egg ( so if you are making 6 eggs add 3 teaspoons of onions and so on) Add 1 teaspoon of Dressing per egg, mix. Spoon yolk mixture into each ½ egg white, sprinkle with paprika. Store in refrigerator and enjoy.
Yeild: 4 net carbs per recipe if using stevia
