Low Carb Ham and Cheese Egg Cups


I was having a large group of friends coming over for brunch and needed some healthy low carb food to serve for the occasion. So one of the recipes I decided to serve is this Low Carb Ham and Cheese Egg Cups. They are absolutely deli shes. You can bake them to have a solid yolk or bake less and have a runny yolk. Either way they are deli sh and I even pick them up and eat them with my hands.

I used a ham made by Capello which has a little flavor of rosemary in it, I think it even made this Low Carb Ham and Cheese Egg Cup taste even better. Such a simple recipe but what flavor, Its worth the try.



 

1 slice of thin ham (my slice of ham was so large I cut it in half)

1 teaspoon shredded cheddar cheese ( or any cheese of your choice)

1 egg

salt and pepper

Preheat oven 400 F

Coat muffin tins with oil of your choice, (I use avocado oil or olive oil)

Line the muffin tin with a slice of ham, sprinkle with cheese. Crack an egg in each cup
season with salt and pepper.

Bake for 15 minutes to have hard yolk, Bake 10 to 11 minutes for soft yolk.

Servings 1 ( just duplicate if you want more, which you will:) )

Yield: 1.4 carbs
