Low Carb Lemon Shrimp Zoodles


This dish is almost quilt free, I just inhale this Low Carb Lemon Shrimp Zoodle dish, it took 20 minutes from start to finish. Any time I go to the grocery store I never find a lack of zucchini. So if you can find the PC Spiral to make the zoodles, you will be able to make this the easy way. Such delicious flavor between the lemon, cherries and garlic.

IMG_58074 large zucchini( remove skin if you like)

1 Tablespoon Olive Oil

1/2 cup chopped onion

340 grams shrimp

1 cup of quartered cherry tomatoes

2 Tablespoons dried parsley

Sauce

2 crushed cloves garlic

lemon juice from whole lemon

1 Tablespoon olive oil

1 Teaspoon sea salt

parmesan cheese (optional)

Find the center of the zucchini and press it into the round circle then take the lever with the pointed prongs and press the other end of the zucchini into it. Start turning the handle clock wise and the zucchini will turn into spaghetti.

In a skillet medium heat, heat olive oil, put all zoodles into the pan, place lid on, stir occasionally. (approxiametly 4 minutes)

Remove zucchini and place in a calendar to drain the excess liquid.

Saute onions add a bag of shrimp, add tomatoes, parsley.

Sauce

In a small bowl add garlic, lemon juice, olive oil and salt, mix well.

In a large bowl mix the zoodles, shrimp mixture and sauce together, sprinkle with cheese and serve.

(I cut my zoodles with scissors because I find them very long)
