Low Carb Poached Egg Avocado Balls


This is something everyone needs to try at least once this Low Carb Poached Egg Avocado Ball. My daughter loves avocado with anything and saw this recipe on the Food Network so I thought I would give it a try. I was impressed with the flavor and it was funny because I ended up poaching my eggs two different ways. The first try was boiling the water, turning it down and stirring the water into circles in the pan, then I added one raw egg and the egg was to twirl around and keep the egg white circling to make the egg a ball. It did not work out that way for me. When I removed it from the hot water I put it in ice water to stop it from cooking but all said and done when I cut open my Avocado Ball the yolk was hard which was good because my Mother does not like runny yolk.
Now when I poached my eggs in wrapped plastic I could see what it was doing while it was cooking and they came out in perfect balls and runny yolks.
But I must say runny yolk or hard yolk the meal was delisious and everyone was happy in the household.

3 slices bacon

1 egg

How to poach egg:

Take a large piece of saran wrap and lay over a small bowl, place your fist to push the saran down into the bowl. Using avocado oil or olive oil grease the plastic that’s sitting in the bowl.
Place your raw egg in the center of the plastic in the bowl. Bring up all 4 corners of the plastic and twist plastic to form the egg into a ball. Tie plastic in a knot.
Fill a saucepan with 6″ of water, bring to a boil and turn down to simmer.
Add the raw egg in the plastic to the water and let sit for 4 minutes ( you will be able to see through the plastic if the egg white is still clear) You want your yolk to be runny so you might have to adjust your time in the water.

Avocado:

Cut your avocado in half length wise,take a knife and stab the pit and twist to remove it from the avocado, using a spoon carefully remove the shell of both halves of the avocado. By using a spoon or small scoop you need to make the hole where the pit was a bit larger to put the poached egg in.

Instructions

Remove the egg from the plastic, place in the hole of the avocado put the other half of the avocado on top of the egg to make the avocado whole again.
Take 3 slices of bacon and wrap the avocado until you can only see a ball of bacon.
In a skillet, fry the balls gently turning until all the bacon it cooked.

Serving: 1

Yield: 4.1 net carb
