Low Carb Salad Dressing


I’m just getting back from a quick grocery store run to grab some food for dinner tonight. While there, I stopped in the salad dressing aisle, not for salad dressing, but for an Italian seasoning packet that I mix with extra virgin olive oil and red wine vinegar. It makes for a perfect, salad dressing with healthy ingredients, were as the typical salad dressings that line grocery store shelves are unhealthy.

I have stopped buying bottled dressings all together. They’re horrible for you, and for the most part the “all natural” versions are as well.

Why? is the Question?

1. Read the label on the salad dressing bottle and you’ll likely see canola oil, soybean oil, and/or vegetable oil as the main ingredients. These oils are extremely processed, rich in inflammation-promoting Omega-6 fatty acids which are unhealthy for your body.

“All-natural” salad dressing found in the refrigerated section isn’t much different. You’ll still see these oils as the base of nearly all of those brands as well. The reason is these oils are so much cheaper!

Also, don’t be tricked by labels that claim “Made with Extra Virgin Olive Oil”. The reason, they’ll point that out on the front of the label because it sounds good and makes you believe that it’s an extra virgin olive oil based dressing. But if you read the label and find the same vegetable oils listed first and find the extra virgin olive oil down towards the bottom of the list. This only means that there is at least a drop of extra virgin olive oil in the bottle, and often times that’s all it has. This is Unethical and Unhealthy.

2. In addition to cheap, potentially harmful oils, store bought salad dressing is also loaded with sugar. It often comes in the form of high fructose corn syrup which is the worst form of sugar available). Read the label.

3. Ingredients contained in traditional salad dressings have artificial additives and preservatives that often poison these products. The only way to avoid this I recommend you making your own Dressing!

I am not a fan of just plain old mayonnaise. I love coleslaw dressing but I want to use a Low Carb Dressing. I use coleslaw dressing for my Egg Salad, Deviled Eggs, and Cauliflower Salad. I could go on and on. I used the dressing for my Egg Salad Stuffed Tomatoes and it was a hit in our household.

If you are unsure as to whether you will like it, here is a smaller measurement to try before you make a larger amount. If you try it by itself you will find it extra sweet but when you mix it into your recipe you will be very surprised.

Low Carb Coleslaw Dressing 009

Homemade Mayo
1 cup avocado oil
2 eggs
1 tsp lemon juice
½ tsp salt
½ tsp dry mustard
1 tsp white vinegar

If you can use an electric hand blender (immersible)

Put all ingredients in a measuring cup, place the blender at the bottom of the cup, turn on

Blend until the ingredients mix and thicken.

There you go MAYONNAISE!

 

Sample Size of Dressing

3 Tbls mayo

¾ tsp dizon mustard

¾ tsp applecider vinegar

2 1/2 tsp erythritol (powdered)

240 ml Measurements

1 cup mayonnaise

2 Tbls mustard

2 Tbls apple cider vinegar

¼ cup + 2 Tbls erythritol (your choice sweetener)

Place all of the ingredients in a mixing bowl, mix well

Pour into a container and refrigerate

Yield: 0 net carbs
