Low Carb Tuna Stuffed Baked Avocado


This Low Carb Tuna Stuffed Baked Avocado dish is sooooo delicious, not just delicious, but healthy also. I would never eat avocados and could not understand why anyone would. But you know, I hadn’t even tasted one. They just didn’t make any sense to me. It has just been recently when I have fallen in love with them. They are soft, creamy and smooth and you can do so much with them in different recipe. The combination of tuna, tomatoes, onion, spices and cheese makes this delicious dish.

Tuna Stuffed Avocado

Tuna Stuffed Avocado

3 large avocados (cut in half and pitted)½ block of cream cheese (125 grams)

6 oz can white tuna (I used Ocean’s flaked white tuna)

1 tbls scallions or white onion

¼ cup chopped tomatoes

¼ tsp salt

¼ tsp pepper

Pinch of cayenne pepper

½ cup parmesan cheese

Mix all ingredients together except the parmesan cheese and avocados.
Halve your avocados and remove the pit. Fill the hole with tuna mixture, generously sprinkle with parmesan cheese.

Bake at 400 for 8 – 10 minutes, or until the cheese is golden.

Makes 3 servings (1 whole avocado per serving)

Yield: 1.9 net carbs
