Low Carb Cauliflower Casserole


Yes we are cooking with cauliflower again. I love this Low Carb Cauliflower Casserole and thought it was time to share with you. You could use Brussels sprout in place of the cauliflower if you’d like it will be just as good. This recipe is very easy and quick to put together and it is a great way to get the kids to eat there vegetables. I took my left overs to my daughters so they didn’t have to make supper and I’ll tell you the kids loved this Low Carb Cauliflower casserole.

So lets get started and I will show you how to make it!

1 pound lean ground beef

1 teaspoon herbamare

1 chopped medium onion

1 large minced garlic clove

dash of red pepper flakes

1 teaspoon dry oregano

2 tablespoons tomato paste

796 ml of diced tomatoes

1 small head of cauliflower

2 cups of shredded mozzarella cheese

1 1/2 cup of ricotta cheese

1/2 cup of shredded parmesan cheese

Heat your skillet add ground beef, onion,herbamare,garlic, and oregano, cook until the ground beef is cooked.

Push the ground beef to one side of the skillet and on the one side of the skillet add tomato paste and half the can of diced tomatoes. Mix the two together and then stir in the ground beef till mixed well.

Take your small head of cauliflower and slice each floret thinly.

Using an oven ware dish place a layer of cauliflower on the bottom of the dish.

Add a layer of crushed tomatoes over top of cauliflower and put a layer of mozzarella cheese on top of the tomatoes.

Next layer add the ground beef mixture.

Add another layer of cauliflower.

Take a spoon and just drop 1 cup of ricotta cheese over top of the layer of cauliflower.

Add another layer of the ground beef mixture.

Top the casserole with the rest of the tomatoes, ricotta cheese and mozzarella cheese.

To finish the topping add the freshly grated parmesan cheese.

Preheat the oven to 375 F

Bake in the oven on the middle rack for approximately 45 minutes.

Remove from oven and let sit for 15 minutes.

You will find there is a bit of liquid in the casserole but I found it thickened up the next day.

Servings: 8

Yield: 7.3 net carbs
