Low Carb Crunchy Peanut Butter Chocolate Coconut Balls


I love peanut butter, I love Chocolate and I love Coconut! You put these altogether and what have you got? amazing Crunchy Low Carb Peanut Butter, Chocolate Coconut Balls!! The trick to making this snack is to use the warmth of your hands. That little amount of heat helps make the balls stick together.

 

2 Tablespoons (28.35 grams) Salted Butter

3/4 cup (180 gram) natural crunchy peanut butter NATUR

1 cup (95 grams) unsweetened shredded coconut

1 Tablespoon cocoa powder

3/4 (155 grams)cup sweetener powdered (erythritol/ monkfruit)

1/2 teaspoon vanilla extract

In a pot on the stove or microwave, heat up all ingredients (except coconut) until everything is mixed well. Remove from stove, add coconut and stir well.

I used a small scoop to make the balls all the same size and individually roll and press the ingredients till firm into a ball. ( The heat from your hands helps pack them together.)

Instructions to Microwave:

In a microwaveable bowl, add butter, peanut butter, vanilla, sweetener and cocoa. Mix well!
Microwave on high for 1 and 1/2 minutes
Stir and make sure the ingredients are mixed well.
Add the coconut and mix well.
From there follow instruction up above to make balls and seal in container and place in the fridge.

Refrigerate in sealed container.
