Low Carb Chicken Thighs with Onion


What an amazing dish! This Low Carb Chicken Thigh With Onions recipe is a staple in our house. It’s such a simple and humble dish, yet full of rich flavors and absolute comfort. the Low Carb Chicken Thighs are so tender, you almost don’t even need a knife, Super juicy, super tender chicken.

There’s enough juice from the thighs to pour over steamed cauliflower or mashed cauliflower, to soak up all the delicious onion and juices. The flavors are amazing, the combination of the onions, spices and juice make these chicken thighs to die for!

I hope you enjoy and I will show you how to make it!

6 bone in with skin chicken thighs

1 tablespoon avocado oil

1 tablespoon apple cider vinegar

1/2 teaspoon fresh lemon juice

2 teaspoon Dijon mustard

1 tablespoon minced garlic

1 1/2 teaspoon herbamare

1 teaspoon Cajun spice

1 teaspoon salt

1/ 4 tsp fresh pepper

1 medium onion thinly sliced

Preheat oven to 375 F
In medium bowl, mix vinegar, oil, lemon juice, garlic, mustard, all spices. Add chicken thighs to the mixture and coat.
Spread onion slices evenly on bottom of an 8 x 8 ovenware dish.
Arrange chicken thighs, skin side up, on the onion slices.
Bake for approximately 50 minutes.
I baked mine in my Chefman Airfryer which has bake and convention bake.
I found it saved using so much energy in my conventional oven.
