Low Carb Creamy Curry Turkey Broccoli Casserole


 

Well we just got through our American Thanksgiving ( Happy Thanksgiving everyone!) and always have left over

Turkey. So I thought that if you want to make a different dish for left over turkey you will have to try this Low Carb

Creamy Turkey Broccoli Casserole.

It is quite tasty and the nice thing is if you are a Curry Lover then you can add more curry. Just taste it when you add

it to the mayonnaise mixture.

This Creamy Turkey Broccoli Casserole can also be made with shredded chicken breast which I explain in the

instructions. You can also use a rotisserie chicken you picked up a the grocery store.

You are really going to enjoy this recipe.

So lets get started and I will show you how to make it!



4 cups left over turkey

4 cups bite-sized broccoli pieces

1 cup mayonnaise (do not use fat-free, they are higher in carbs)

1 cup sour cream (do not use fat-free)

1 T lemon juice

2 tsp. curry powder

1/4 cup finely grated Parmesan cheese

3 cups shredded Cheddar Cheese ( I used cheddar and marble)

Herbamare Seasoning to taste or salt and fresh-ground black pepper to taste

Instructions

Preheat the oven to 375F

Use a 9 x 13″ glass ovenware dish

You can make this recipe with chicken also. If you are, sprinkle with salt and pepper or herbamare, put 4 skinless boneless chicken breasts in a saucepan add water to just cover the chicken. Bring to a boil, turn down to low, cook for 10 to 12 minutes.

Remove from pan, let cool. Once cool take two forks and with one fork hold the chicken down and use the other fork to shred the chicken. Set the chicken aside.

Put the broccoli in a steamer and steam for approximately 10 to 12 minutes. You want the broccoli to still be crisp.

Stir together the mayo, sour cream, lemon juice, curry powder in a small mixing bowl. Then mix in 1 1/2 cups of the grated cheese and the Parmesan cheese.

Mix the turkey and broccoli into a large bowl, then put into the ovenware dish. Move the turkey and broccoli so ingredients are evenly distributed.

Sprinkle with Herbamare Spice or Salt and Pepper.

Spread the cheesy creamy topping over the chicken/broccoli mixture.

Top with the other 1 1/2 cups grated cheese.

Bake uncovered for 35-40 minutes, or until the casserole is bubbling hot.

Remove from oven and let sit for 10 minutes.

You should beable to cut them in squares.
