Low Carb Lemon Squares


I had bought a bag of lemons to put in my shake every morning and found I was not using them fast enough so I thought I had to make something with them so they are not wasted.

These Low Carb Lemon Squares are sure to become a new stand by recipe in your house. Once you see how fast and easy these incredibly tangy and delicious lemon squares are thrown together, you’ll never waste another lemon again.
So lets get started and I will show you how to make them!

Crust

1 egg

1 cup almond flour

2 tablespoons melted butter

1/4 teaspoon salt

Mix all ingredients together, press in a 7 x 11″ ovenware dish.

Bake for 20 minutes at 350 F

Remove from oven and let cool

Filling

zest of one lemon

3 lemons

3 eggs

3/4 cup of almond flour

3/4 cup erythritol

Add to a bowl zest from one of the lemons, juice from 3 lemons approx 2/3 cup, add eggs, salt ,erythritol and almond flour. Mix well

Pour the lemon mixture over the almond crust

Bake in oven, middle rack, 350 F for 25 minutes.

Let the square completely cool before cutting.

Keep in fridge, you can also freeze them.

Servings: 28

Yield: 2.1 net carbs
