Low Carb One Dish Cheesy Taco Bake


I like to make this Low Carb Cheesy Taco Bake! It is so filling and gooey and cheesy. This recipe just uses a handful of ingredients and it’s a huge hit with the family! This Low Carb Cheesy Taco Bake can make taco night so fun and festive. In the recipe I used the basics but you can top it with a dollop of sour cream, green onions, salsa. There is know end to what you can do with this recipe.
I personally love it just the way I made it but its up to you as to what you want to do. The cream cheese and cauliflower adds such a great flavor to this dish.

My husband love eating this Low Carb Cheesy Taco Bake in a low carb wrap.
The leftovers heat up great the next day or you can put it in the freezer for a day you don’t know what to have.

So lets get start and I will show you how to make it!




2 tablespoon butter

4 cups shredded cauliflower

2 teaspoon herbamare or salt and pepper ( 1 tsp for cauliflower and 1 tsp for ground beef)

1 tablespoon Taco Seasoning (recipe below)

8 ounce cream cheese

1 1/2 lean ground beef

1 medium onion chopped

2 cups of drained canned diced tomatoes

1 small can of green chilies

2 cups shredded cheddar cheese

In a skillet melt butter and add shredded cauliflower and herbamare.

Mix well, cover with lid until the cauliflower is soft.

Remove the lid, add the cream cheese and let melt.

Remove cauliflower mixture from the skillet and spread evenly in a 7 x 11 ovenware dish.

Set aside.

Using the same skillet add the ground beef, onion and herbamare and taco seasoning, cook till meat is browned.

Strain the tomatoes and chilies with a strainer to remove extra liquid.

Add the tomatoes and chilies to meat mixture and mix well. Cook for 5 minutes more.

Spread the meat mixture evenly over the cauliflower mixture, then add the shredded cheese on top.

Preheat oven 350 F and bake for 20 minutes or until all cheese is bubbly melted.

Remove from oven and let set for 10 minutes before serving.

Taco Spice
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp paprika
½ tsp oregano
½ tsp onion powder
¼ tsp salt
¼ tsp pepper

Place in container shake well.

Servings: 8

Yield: 5 net carbs
