Low Carb Roasted Nut Cereal


What a great way to start your day with this Low Carb Roasted Nut Cereal, it contains healthy fats and will keep you satisfied for hours.

1 tablespoon (8 grams) roasted unsweetened shredded coconut

1 tablespoon (7.19 grams) roasted chopped walnuts

1 tablespoon (8.12 grams)roasted chopped almonds

3 tablespoons ( 14.3 grams) full fat coconut milk

3/4 tablespoon coconut oil

1/4 teaspoon powdered erythritol

Preheat toaster oven or conventional oven to 325F

Spread the coconut, almonds and walnuts on a tray and place in oven.

I bake a larger amount of the nuts so I can store in containers in the fridge for future servings of cereal.
Bake until you see the coconut turns a light golden brown ( approximately 5 minutes, keep an eye on it while its baking so it does not burn)

In a cereal bowl add 3 tablespoons of full fat coconut milk, 3/4 tablespoon coconut oil and 1/4 teaspoon of powdered erythritol.

Place bowl into microwave and cook for approximately 30 seconds, remove and stir.

Scoop out a tablespoon of walnuts, almonds and coconut and place in the bowl with the coconut milk.

Stir and enjoy!
