Low Carb Strawberry Jello Dessert


I took a recipe for regular strawberry pretzel salad and turned it into this Low Carb Strawberry Jello Dessert.
This low carb strawberry jello dessert is the perfect party or picnic dish. I see everywhere on the web as to how it looks so amazing and perfect for summer! Well it not just for summer its beautiful bright red will accent your Christmas dinner table. This is an all year round dessert and so simple to make!
The only thing I’m not fussy about is the jello mix I am using, unfortunately it has aspartame in it. There are other recipes out there to make your own jello but I have not tried them as of yet. Someday I will experiment and see what I come up with. So in the mean time I chose to use the no sugar Jello brand.

So lets get started and I will show you how to make it!



Ingredients

2 10.1 gram boxes of sugar free strawberry gelatin

8 large strawberries sliced

1 cup whipping cream (35%)

3/4 cup powdered erythritol

8 oz of cream cheese softened

3 cups raw pecans chopped

1/2 cup soft butter

Instructions

Preheat oven to 350 F

Place your whole pecans into a food process and finely chop.

Melt your butter in a microwave add 1/4 cup sweetener and pecan and mix well.

Using a 9 x 13 ovenware dish press the pecan mix evenly on the bottom of pan to make the crust.

Bake at 350 F for 15 minutes and let cool.

In a bowl add 2 cups of boiling water to the strawberry jello mix.

Stir until all the gelatin is dissolved then set aside to cool.

In a separate bowl add your cup of whipping cream and 1/2 cup erythritol and mix with electric beater until it turn into peaks.

In a separate bowl beat the room temperature cream cheese until smooth, add the whipping cream and mix well until fluffy.

Pour and smooth the cream cheese mixture over the cooled crust, try and cover all the crust with the cream mix so when you pour the jello on top it does not leak through. Set aside.

Slice approxiametly 8 medium size FROZEN strawberries.

Mix the strawberries into the gelatin and then pour over the cream cheese layer. ( if you add the strawberries to the hot jello it will set instantly so I recommend you add the strawberries just before you pour the jello on top of the cream cheese mixture.

Refrigerate for 4 hours before eating.

Servings: 12

Yield: 2 net carbs
