Revised Low Carb Coconut Clusters


Since I created my Low Carb Sweetened Condensed Milk this recipe Low Carb Coconut Clusters needed the condensed milk to make them stick together and create a great crunch and flavor.
I wanted to share my Revised Low Carb Coconut Clusters with you so you can have the best of the best. (until I find something even better:)

So lets get started and I will show you how to make them!




3 cups coconut smiles

1 cup pumpkin seeds

1/2 sunflower seeds

2 tablespoon chia seeds

My sweetened condensed milk (link to make)

Preheat oven 325 F

Pour your sweetened condensed milk in a large bowl, add all the coconut and seeds to the condensed milk.

Stir until all mixed well.

Place a silicone mat or parchment paper on a baking tray, spread a thin layer of the mixture.

Bake for 15 minutes, remove the cluster from the silicone mat, break the clusters into pieces, place on the baking sheet.

Turn off the oven and return the baking tray back in the oven and leave until the clusters are crunchy.

I actually left mine in the oven over night and they were perfect!

Store in a sealed container, I don’t even put them in the fridge but you could.

Servings: 70

Yield. 1/1 net carb
