Low Carb Cauliflower Taters


I am always looking for recipes to create with cauliflower, these Low Carb Cauliflowers Taters or Patties are quick and easy to make. I like making them in the regular size muffin tins; they are a lot less work. This recipe would be great to make in place of hash browns for your breakfast. I know you will really like the substitution!

Cauliflower Taters

Cauliflower Taters

1/2 large head cauliflower, coarsely chopped

1/3 cup of shredded cheese

1/4 cup coarsely grated Parmesan cheese

2 tbls almond flour

1/2 tsp. salt

1/2 tsp. pepper

1 egg

1. Shred cauliflower in food processor, place in a mixing bowling.

2. Add cheese, almond flour salt pepper and mix well.

3. Add one egg and mix until the egg has coated the cauliflower mixture.

4. Preheat the oven to 400F.

5. Spray a Mini Muffin Pan with non-stick spray and place a teaspoon of the mixture in the muffin pan.

6. Bake for 15 minutes.

7. Turn each tatter over and put back into the oven and bake about 10 minutes on the other side.
If you use the regular size muffin tins (I like the silicone cupcake holders that I sit them in the muffin tins) bake for 35 minutes.

Servings: 12 mini taters
10 larger taters
Yield: 1 large tater: 1.1 net carb
